The Crucian Vienna Cake is one of the most treasured traditional desserts of the United States Virgin Islands, and especially beloved on the baker's home island of St. Croix, United States Virgin Islands. Dating back to the late 1800s, the Crucian Vienna Cake remains a centerpiece at Birthdays, Weddings,  Anniversaries, and Cultural Events and Holidays.

The cake is a distinctive moist, dense, pound cake,  baked, and for authenticity separated into five (5) - (7) layers, carefully stacked with alternating thin layers of vibrant and flavorful traditional tropical jelly and preserved fruit fillings between each layer. The result is a beautiful mosaic of alternating flavors and colors, with each slice offering a combination of the classic traditional tropical jelly and preserved fruit fillings of Guavaberry, Green Lime (Greengage), Pineapple, Guava, and Apricot, each lending its own tangy sweetness. To complete the traditional cultural masterpiece, the layered and stacked cake is covered in a smooth layer of icing, giving the cake a simple yet elegant look, encasing the rainbow of flavors hidden inside.
