Sam's Caribbean Black Cake - This product is Seasonal (Thanksgiving, Christmas, and New Year)

This cake is a true labor of love and a cherished part of Caribbean tradition. Unlike the lighter rum cake, my black cake begins with dried fruits, raisins, prunes, cherries, and currants, soaked in a blend of dark rum and wine for months. I purée the fruits into a rich paste before folding them into the batter, which gives the cake its dark color and pudding-like texture.
